I love baking. It fills the whole house with yummy smells, it makes my kitchen feel "homey", and sometimes it's a great stress reliever. I'm going to try to use this post for some fun favorites =)
Blueberry Coffee Cake
This is a fun recipe to do with the kiddos! Jaden likes to stir the batter and mix in the blueberries. You can also switch the blueberries for any kind of berry, or mixed berries. Fresh or frozen work.
Step one: Pour 1/3 cup of oil into a one cup measuring cup. Add an egg. Then, add milk until the mixture reaches the top of the cup.
Step two: pour that into a bowl, and add 3/4 cup of sugar and mix thoroughly.
Step three: Add 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1 and 1/2 cups of flour and mix.
Step four: Fold in one cup of blueberries.
Step five: Pour into a greased loaf pan (or two mini loaf pans)
Step six: Bake for 30-40 minutes at 400 degrees.
Step seven: Cool for five minutes in pan; turn out onto wire rack and cool completely.
